 Why Does a Pressure Cooker Cook Faster?

A pressure cooker can turn tough food into a soft, delicious meal much faster than an ordinary pot.

But why?

The secret is pressure.

At normal atmospheric pressure, water boils at about 100°C. Inside a pressure cooker, steam is trapped and the pressure rises. This allows the water to reach a temperature higher than 100°C before boiling.

The hotter water and steam transfer heat to the food more quickly. That is why rice, pulses, vegetables and other foods cook faster inside a pressure cooker.

The little weight on top of the cooker has an important job. It allows excess steam to escape when the pressure reaches a certain level, keeping the pressure within a safe range.

So that familiar whistle we hear from the kitchen is actually a tiny science lesson:

More pressure → higher boiling temperature → faster cooking.

The pressure cooker is a wonderful example of how understanding a simple law of physics can transform an everyday activity.

Science doesn't always live in a laboratory.
Sometimes, it is quietly whistling in our kitchen.
